Mocha Mousse Filled Cupcakes

Another birthday at the office allows for another excuse to bake! This one was for a new addition to the office who had the simple request of yellow cake with chocolate frosting. Of course I can't let well enough alone, so I had to fill them with something, and two of my go-to flavors are mocha and white chocolate. So these plain looking darlings are filled with a decadent white chocolate chip mocha mousse.

The birthday girl took her box of cupcakes to disburse around the building and when she returned to our hallway she was highly amused by how many people she encountered on the way knew immediately that it was her birthday even if she had only met them just recently. I explained that people around here know exactly what that familiar white box means and are quick to make fiends with anyone who holds it.
